Olive oil is one of the main staples of the Mediterranean diet. This healthy oil contains high amounts of monounsaturated fats and is believed to carry many health benefits for those that consume it. The Mediterranean diet is recognized world wide for being one that is extremely healthy. Generally this diet consists of large amounts of fish, fruits, vegetables, beans, and olive oil. Monounsaturated fats are great for lowering LDL cholesterol levels. While “bad” cholesterol levels can be lowered by consuming olive oil it also raises good cholesterol levels. Studies have shown that people who consume at least two tablespoons of raw olive oil daily for at least two weeks are at a significantly lower risk of heart disease and have healthy cholesterol levels. Olives are also great for stomach and digestive health. This oil is well tolerated by the stomach and it serves to heal, protect and prevent stomach problems such as gallstones and ulcers. Olive oil also contains vitamin E, fiber, iron, and other essential minerals.
When choosing olive oil try to choose the oil that is the least processed. Virgin or extra virgin are not as processed as “pure” olive oil but are slightly higher in price. Storing the oil in a cool dark place will also preserve and maintain the content. One should also note that cooking with olive oil will not reap the same benefits as using it raw does. Drizzling the oil on salads, putting a few tablespoons in smoothies, and using it to make sauces or other dressings are all easy ways to obtain the benefits of this amazing raw oil.
